Question about Duck, Cuz I am native Texan and do not eat duck.

We have a good friend here in Rockport married to a super nice Australian lady. Marsha was visiting with her about Thanksgiving and was told they were having duck. So I have always found ducks to be what 3 - 4 lbs max, is that right? How many ducks to feed their family of 12, gotta be more than one, does it not?

Probably need a sack of Whataburgers to feed the people with sense enough not to eat a duck.

1 avg duck will probably only feed 3 normal eaters. So for 12, your looking at 3-4 minimum

Duck (farm raised) can be and is very tasty. But for that many yes 3+ would be needed. Might as well do a turkey at that point.

Smoked Farm raised Whole Duck on the smoker a few times. Injected the duck, then rubbed it yellow mustard and hit it with some MeatChurch rub. Then on the smoker at 220 degrees with Post Oak.

F a duck, and double F a goose. Now having said that, Peking duck done right is to die for, but I highly doubt you're getting that in Rockport. Good luck, take small bites, smile and tell them it was awesome, then go get some fast food on way home.

We used to buy roasted ducks at a chinese restaurant in Arlington. They usually had several hanging, along with other meats, in their front display. Always very good.

You can easily feed six people with one duck as long as you have a lot of sides. Duck is super rich, and you don't want a lot of it. Two people for each breast, someone gets a leg quarter, and that's plenty.

Duck is one of those rare meats that can be great medium or well done.

For those that cook duck.........be sure and cook it on a cedar plank. When done, throw the duck away and eat the cedar plank.

I've taken some ducks I've shot to Pete's Fine Meats on Richmond... (Redheads from Rockport...)

Made them into Tamales. Not too bad. Salsa, queso.. Good to go....

I hunt duck and eat it. We made stir fry out of it and it was really good.

Wife's Cajun uncle soaks the ducks over night in a cooler with ice water, salt and white vinegar. Then he seasons them up & smokes them on the smoker. Then debones the duck and takes all that smoked duck meat and makes a Cajun gumbo

I like wild duck. It's pretty good. Farm raised duck is awesome.

Soak the wild birds, don't overcook either.

I was never a duck fan until I had it at Clancy's in New Orleans….oh baby is it incredible. Probably my favorite meal.

Back when I was serious about duck hunting, I'd take the duck meat and cube it up after deboning it. I'd mix the cubed duck with about a 2:1 ratio of frozen veggies by weight and grind everything together with veggies still frozen. Put ground meat/veg mixture in a pot with a little water and cook gently until cooked through. Once that was done I'd mix it with cooked brown rice.

I'd typically serve it in a dog bowl with some dried kibble mixed in. My Labrador loved it

I chicken fried pintail breast. It was amazing. No marinating or anything. Egg wash, flour and fry.

Visiting my FIL in hospital and asked if he liked "duck meat"…answered with a resounding NO. Read him Fido's method of serving duck…we both needed that laugh (thx Fido) - Merry Christmas everyone!

I was not expecting this level of disdain for duck on the food board. I've had duck twice in my life and loved it both times. The most recent was at the Roaring Fork in Austin. Very good.

I typically avoid because it is is almost always gamey. Then a few weeks ago had had the confit duck at Herbsaint in Nola. Holy hell it was amazing

Din ho bbq in Austin makes a good quality roast duck. Get some steamed rice and vegetables of your choice and you're set for days. Just take an extra zocor or cholesterol lowering medicine of your choice.

I have had some wonderful meals here in NOLA with duck. But I also grew up eating sauce piquate with rabbit and squirrel. So there's that. Headed to Jackson Hole in another week. Expect to eat a healthy dose of elk and bison.

Expand your culinary horizon is my recommendation!

I have only grilled duck once, and it was great, but I eat it at restaurants when it is available.

A properly cooked duck breast is damn good eating and I feel bad for anyone who doesn't know that.

Rattler12: Howdy, that is the same advice we gave to Yankees on outdoor sites that were horrified that we would shoot Jack Rabbits (by the hundreds some nights) and not eat them!

Only way I've ever managed to make wild goose edible is as jerky - heavily smoked, very spicy jerky.

I tried that too, no bueno. This is the only recipe that I have found that works:

Lay out geese on paper or cardboard in the bed of the truck for transport
Drive home
Open windows and listen for mowers, weed eaters or leaf blowers
Find yard crew making the noise
Pull up to house they are working on
Open tailgate
Use broken Spanish to ask if they want the geese
Peel out and don't look back after they take them
Clean out bed of truck to make sure all dead goose smell is gone
Eat a steak
