I have a place in Bolivar, and try to eat my way through a few hundred crabs per year. I usually just boil them in spicy crab boil, then chill them overnight. I cook corn, potatoes, and some chicken drumsticks in the same water. The spice level is fine for me, but some people want it milder.

Anybody have a milder, but flavorful, boil they use? Surely the Chesapeake Bay Yankees don't do cajun-everything.

I have used this with no complaints from the no spic crowd.

You know how the Viet-Cajun fusion was basically the Vietnamese treating crawfish like hot wings? They'd do the boil, then coat them in Vietnamese spices after they were cooked, like people coating wings in a sauce after they're fried.

The simplest solution to your issue is to figure out what makes your crab boil spice mixture hot. If it is a homemade mix, remove that element from the spice mix, and do your crab boil. Once you the boil is done, add that dry mix to your own personal plate, and roll your corn/potatoes/drumsticks in it so you can get the spice you desire, while everyone else eats the 'mild' version.

No first hand experience but the guy that has the By The Water youtube channel uses this. Might be worth a shot.

I bait my crab traps when I clean fish and usually end up with 3-5 crabs. I just get one of the big containers of old bay from Amazon. I use about 1/4-1/2 cup with some cut lemons and onions for my boil. I prefer crabs this way even though I've got a high threshold for heat.
