My heb has prime sirloin on sale this week for $5.49 a pound. Going to buy a lot, vac seal and freeze. Plan on grinding some too at that price.

Other than just grilled and served old Texas steakhouse KC style, any other suggestions?

Sear in smoking hot skillet
Slice and shingle
Serve with homemade chimichurri
Profit

That's a great price for prime-grade beef. I'm jealous.

I wouldn't sous vide. I save that for like a tri tip or chuck steak.

With prime sirloin I typically sear on a cast iron til a good crust on both sides. Slice in 1" strips, then toss with cooked sliced peppers and onions in the same pan. Served with baby potatoes and some yeast rolls.
