I got hanger steak at Granzin's in New Braunfels a while back (within the last 3 years or so). Previously, I was able to get it at HEB, as long as I called ahead, but post-Covid that's no longer an option. Called Granzin's and they hooked me up.

Yep. Hanger and outside skirt. You can get those any time you walk in. And it's the only place I have ever found hanger. I actually found a Teres Major in there last time. I snagged that bad boy fast.

I'm in Granzin's every week and have never seen it there in 10+ years. My son worked there the last 2 summers and never saw it either. Champs has a shop on North Padre now and I'm down there twice a month so it's no longer a unicorn for me fortunately

We use them for venison processing. Anyone know of another local processor with similar pricing and quality? We were able to cut the ground with beef tallow and no one else seems to do that.

When I read of the closing this, too, was my first thought. Readfields did a huge amount to deer processing.

Every processor I use can add beef fat on request. Pretty common service, I thought. Surprised to hear it's hard to find.

Drive to Bellville meat market. Great service and product. Not cheap, but hard to beat.

Scored the last 2 packs of hanger steaks they had in the walk in freezer. And got some outside skirt for fajitas tomorrow. Spent a fortune. But it's worth it.

Ive had bellville, and I love some of their stuff. Just not a fan of their venison that ive tried.

And im sure other places can add beef tallow upon request, but its not typically something they have priced on their sheets, and im not certain if any of them would compete with the pricing Readfields had.

I used Theiss once and their smoked sausage was pretty good but the dried sausage had so much sage that we gave it away.
I went to Bellville yesterday and got some of their venison and pork smoked commercial sausage since they use the same seasoning on it as the custom stuff (commercial is probably red stag but not sure). It is pretty good but didn't have the same smoked flavor that Readfield's consistently produces with local whitetail.

Stonewall Smokehouse has the best dried sausage in the state of Texas. Excellent smokey flavor that is well balanced. Been taking my deer there for over 30 years. They are consistently the best I've found.

4.8 on Google Reviews.
5.0 on Yelp.

ETA: Only bad review was some jackass "new to hunting" and he thought they were unfriendly.

They aren't unfriendly. They are just German.

Not really looking for a 3 hour drive though. I know plenty of good processors and butchers that are 3 hours away.

I guess I wasn't talking to you specifically.

This isn't for groceries for Taco Tuesday. No one I know is going to the deer processor on a weekly basis year-round.

I'm simply providing a recommendation of a quality venison processor central to the whole state. I lived in Midland and would occasionally hunt in West Texas. I'd make the 4+ hour drive, make a weekend out of it, visit family or friends, hike Enchanted Rock...lots to do in that area. Plenty of people drive more than 3 hours for good food/experiences. A lot of hunters travel to get to their ranch or lease in order to hunt. Most serious hunters I know have strong opinions on processors and would travel for processing if they knew they were going to get a quality product.

I'm just sharing my experience.

And the experiences of others...

My apologies. I just assumed you were, considering im the person who brought up processing and needing to find a new one.

No, I dont make weekly trips to the processor. But there is also no reason to drive that far when there are tons of other processors (who re highly rated) closer than that. And the reviews you posted are from years ago. No recent reviews?

I, too, lived in the midland area. There weren't a ton of processors back then. We often went to Barnhart or Junction (or did it ourselves)

Ah, I see...I'm not the best at sticking to context...lol. My bad.

I'm sure there are more recent reviews. I just picked a couple of randoms that mentioned how far they traveled and their willingness to do so.

This is probably my own hang up. I have had bad results with other processors. And after all the hunting and paying a couple hundred dollars that...leaves a bad taste in my mouth (badum tsss!). We used to store all our deer in a walk-in and then we'd have a big sausage-making party around the first of the year. I enjoyed that much more, but granny and pawpaw passed and everyone moved away.

Hope you can find a good solution closer to home!
