The first season is tough to watch. Most of the guest stars are people I don't even recognize, and I was born in 1978. It's also pretty avant-garde.
Like you said, skip to some of the later seasons, particularly the episodes with names you recognize.

The best episodes are those with a really talented musical guest and/or someone who is just really skilled in comedy.
In later seasons, the episodes started having one-episode story-lines rather than just an assortment of acts. Some of those stories are pretty cute.
But Jim Henson was a bit avant-garde himself. If you didn't grow up with this version of The Muppets, you might have a hard time enjoying it.
Some of my earliest memories are of watching this show, so there is a lot of nostalgia for me. But even for me some of the episodes have fallen flat (I was disappointed when I rewatched the one with John Cleese).
We watched the John Denver episode yesterday. JD and the Muppets go together like pb&j if you ask me, but I could see where someone would think the episode is boring and dated.
