I swear I thought Keith Whitley sang it first? ( no not "I never go around mirrors)
I'm pretty confident Randall King isn't the first person to sing this song.
I can't find shiitake on the interwebs…

You might be thinking of Mirror Mirror by Diamond Rio, the first lines are similar.
