It appears that he is playing the guitar and singing.
I have lost any ability to appreciate Dave Matthews, thanks to a college roommate that would listen to his music on repeat, nonstop, and also try to play the guitar and sing the songs himself. Brutal.
I'm not a guitar player but there are lots of videos on YouTube of guitar players gushing about some of the stuff he plays. Long time fan, have see him live nearly 30 times.

Its called scat. basically wordless, vocal improv with roots in Jazz i believe (i too had a very obsessive roommate who "educated" me on the matter. somehow he never managed to make me dislike DMB)AggieArchitect04 said:

This. His chord shapes are weird and super unique. Very underrated guitar player.
