I haven't seen Rebels yet and don't remember it in Clone Wars but

Was her sword fighting education ever covered? Why she chose two blades over a single used in two hands?

Honestly, it was an artistic choice they made in season 3 of Clone Wars. It's never really covered or mentioned. I do think she has a scene in Tales of the Jedi about her learning to use the 2nd blade

The tales of a Jedi episode doesn't explain as much as it shows her struggling with one lightsaber then keeps practicing and adapts to two as she becomes stronger. Also Anakin did it in the movies so I would assume he showed her the technique.

Yeah, it just looks cool and is reminiscent of samurai. Then they retconned some rationale. Which is fine.

I think I one saw someone say that she fought the sith assassin Asajj Ventress, who used two lightsabers, and was inspired to start using two herself after that.

Long story short, given her inverted grip and her preferred form(form 4) while her offense was great, the hold in particular caused gaps in her defense specifically against blaster fire. The second saber while shorter helped balance her out.
