First of all, anything over 1Gbps is pretty much useless or overkill. I'm fairly certain no one on this forum could tell the difference between 1Gpbs and 8 Gbps, from the carrier. Most devices can't even exceed 1Gbps. Wifi 6 and Wifi 7 can support speeds over 1Gbps, but does the device connected really take advantage? Does the router and modem really support it? Even if all of that does, data is a two way street. If the servers or path back to your home don't support those speeds, then you are throttled from that side.
Also, AT&T home "fiber" does offer symmetrical bandwidth. I have a 1Gbps symmetrical connection from AT&T for $90 a month in Houston.
The question would be if Google Fiber offers any form of SLA, or if their infrastructure is more resilient, or if they offer better customer support. Speeds, bandwidth, and price are all comparable to AT&T.
