NUC as Steam Console

My buddy finally got a gaming laptop so I think I'm pretty much done with traditional consoles and am going to move all to steam.

Id like to get a couch to bedroom moveable solution so I can kick back and relax and don't always have to play from the desktop chair. This would be for stuff like TMNT splintered fate, hades, vampire survivor, deeprock, borderlands, Claire etc.

Has anyone done something like this or have any opinions on how viable this would be?
To start, I was looking at something like the GMKtec mini PC i7-1185G7, 32GB ram on amazon.
With black friday coming up are there any cpu/integrated graphics minimum thresholds you would recommend?
Or is there a better solution out there?

For that price, I would get a Steam Deck. Just hook it up to your TV when you want to play on a bigger screen.

At that price I'd look into just downloading Apollo/Artemis (Moonlight/Sunshine) and streaming your PC to a streaming device. Apollo is a fork of Moonlight that allows you to launch a virtual monitor that matches your client display's capabilities.

That's a low budget for a device to game on. The best options for sub $700 would definitely be either an all-in-one device like the Steamdeck or go with a cloud-based game streaming service.

I don't know the last time you played a game on a PC, but moving from the current console generation to a sub $700 PC will probably be a big downgrade in performance.

Yeah I mostly play pc now but nothing too crazy demanding, ark, d2r, factorio, stellaris.
But this would be for controller oriented games. I guess I was hoping that since I don't need the screen that a nuc would be a better value.
I wouldn't say I have a current console, an old Xbox1, and I wasn't very impressed when they made me play games via cloud, so I kinda skipped over streaming. But streaming options seem easy enough to do a test run and see how it goes from the pc.
