Where does one procure fresh poultry in DFW?

Specifically, I'm looking for a whole ostrich. Other suggestions also welcomed.

I might know a guy with a curious nature and a commercial smoker. Emu seems like an easier toe in the water of this pool but he wants an ostrich.

I Googled a bit and found a ranch outside of Scurry. That's a lot closer than Bellville.

Have eaten an ostrich burger courtesy of fuddruckers. If you want to try one. Also have elk and bison.

brs, do these guys sell ostrich or ostrich hunts? Not clear from their website. Any personal experience? This venture is going to require a restaurant capable carcass. So a field/amateur process job isn't going to cut it.

Not associated with the ranch in any way. I just googled whole ostriches. I believe they are a company that sells a variety of animals used to establish a herd.

This company is also an option but seemed less legitimate due to the low cost as well as the fact that they operate in multiple country's.

Why would anyone waste money on buying an ostrich to eat?

We had a family friend get suckered into the whole ostrich/emu scam back in the day. He cooked a whole emu on a smoker for his daughters graduation party and I remember it being pretty good.

While the spatchcock method would need photos, I'm wondering if you are going to brine it in the bath tub.

I helped process ostriches at Readfield's in the late 90s as an undergrad. Dr. Blue Mclendon had a healthy distain for students who missed her class, even if it was for University sanctioned competition. However, she also had a big ostrich research project and had gotten in a bind. A classmate and I emptied and weighed gizzards for extra credit. They're dumb and fowl animals.

On my recent trip to Colorado, Bruno from the ski and bow rack told me that he once saw someone using a "pack ostrich" in the Backcountry. He confirmed my earlier assessment.
