my input as a child in the kitchen with Nanny was helping with the sprinkling on of the posypka. This was done immediately before the kolache was put into the oven. I would sneak a spoon full every once in a while for my own enjoyment
Posypka is the mixture of flour, sugar and butter which creates a crumbly topping.

You folks need to plan for last Sunday in April every year and come to the St. Mary's Grotto Celebtation in Frydek, Tx (near Sealy).
Good ole Czech celebration/live auction, music, dancing, noon meal (huge portions) and kiddie rides. But the most awesome and longtime tradition hand made Kolaches made by church ladies all day on Saturday. Sold on Sunday morning and all gone by noon. Come out a see us!

As a 3/4 Czech, 1/4 German Catholic, I definitely approve of this thread. Apple, apricot, and peach are my favorite flavors.

Both my parent's families are primarily Czech and hail from the Caldwell & Frenstat areas in Burleson County. My grandmother on my Mom's side is in her upper 80s and has baked probably thousands of kolaches across her life.

Kolache festival in Caldwell is always the second Saturday in September (39th one this year), make sure yall stop by and attend if you've never been. My grandmother used to bake for it until she burned out two ovens in less than five years.

Nothing worse than kolache dorks who get mad about the term "sausage kolache".

My Czech grandmother used to make a poppyseed kolache, but it was different than your typical kolache. She made the typical ones too, but this was different. It was probably the size of a pie but thin like a small pizza. It had poppyseed filling spread across the top and posypka over that.

It was awesome. Unfortunately, I don't have the recipe. Has anyone had something like this? Is it just a different way of making a kolache, or does it have a specific name?

We were in Prague, Czech Republic, in Sep '22. Went looking for a kolache shop, found the "Kolacheria", with this sidewalk sign!
Owners had visited TX twice, Ennis was as far south as they traveled.
