Deer processor recommendation (corpus to Austin)

Looking for deer processor recommendations between corpus and Austin.

Tuttles in Woodsboro is closed on Sunday's so not an option.

Can anyone provide reviews for Clayton's in Portland/Odem?

Has anyone tried Westwood Wild Game in Lockhart? Fairly new I think. Looks like they built out a pretty professional operation based on the building.

I currently have a deer at Hudson in Austin. I'd like to diversify and have this one processed somewhere else.

Just used Granzin's in New Braunfels. Did summer sausage regular, cheese and jalapeno and cheese. All real good. Linked sausage was good but I just had them do regular seasoning and low smoke because my wife and kids like it mild flavor.

A&A Custom Processing on Greenwood in Corpus. They take deer that are only field dressed. Clayton's in Odem, the deer have to be quartered. Clayton's in Portland takes field dressed deer but I think both locations ship the deer to another city for the actual processing. I'm pretty sure that's what they told me. Tuttles only takes de-boned meat.

According to their website, they are not the same as the Schott Taxidermy/processing/country store in Helotes. Think it must be the family splitting things up again or something. I knew the meat market and processing were supposedly two brothers.

I'm not sure what you want done with the meat. I've only had them make ground meat for me one year, when I was too busy.

I'd stay away from Granzin's. I'm pretty sure they just mix your meat with everyone else. I do like their meat market for beef though.

Not a fan of Granzin's. They are stupid expensive, not great smoked sausage, and require too high minimums so you can't get much variety. I use Schott's

Same. I used them before I started taking mine to Schott in Helotes. I brought in a pretty good sized deer to Granzins and they came back with a much smaller amount of meat than I was expecting. I think it was pretty clear they swapped my meat total with somebody else's doe somewhere along the way, but I had no way to prove anything. For the prices they charge, shouldn't have to put up with that.

Had the same issue. We took them three deer, and I think we got back one deers worth of meat. My brother in law picked it up and didn't notice so by the time I got it from him, it was too late. Love their meat market, but I'll never take a deer there again.

In case you have a roast that you were planning on cooking but never got around to it, take it to Bellville anytime and they will turn it into sausage for you. The have a bar code system that insures that you get get your meat back. Other processors dump all of the venison into a big hopper and you may not get your own deer back. Bellville Meat Market tracks your order through the whole processing process step-by-step. They can turn your game into a huge variety of finsihed products: smoked sausage, hand made tamales, pan sausage, dry sticks, jerky, pan sausage, ground meat. One last thing, their packaging is the best. They use heavy mil plastic which protects against. When they package ground venison, they shape it into flat squares so they will stack in the freezer and the frozen package of meat wont roll out onto your foot. Give them a try. You wont be dissapointed.

Dziuks was our go to processor when I used to hunt in South Texas. Great stuff. Hopefully it has not changed in the last 20 years . Their summer sausage and dried sausage is the best I have ever tasted.
So the greatest civilization is one where all citizens are equally armed and can only be persuaded, never forced. It removes force from the equation... and that's why carrying a gun is a civilized act.

Wiatreks is owned by good people, the Ray family. Was in the Band with Carter Ray, who's managing it in some form I believe. Absolutely good people.

Primo Processing in Hondo is also good. They've processed all of our Bison for us

We've done Dziuk's and Wiatrek's over the years but have come to prefer Wilson County Wild Game Processing. Their dried sausage is my favorite of the bunch. All good though.

Same. Charged me $2.50 a pound for a hog including skinning and vacuum sealing, no sausage. Night time drop off and easyish access to the toll road to Austin.

We have gone to them for years and were sad when they stopped processing. Noticed they said they were back into processing and dropped off several deer this year. The owner was there and said he had to buy his brother out to be able to get the processing going again

Willie Joe's, High Hill near Schulenberg. Have a weekend drop off cooler and they process your deer only. Great sausage.

The one in Helotes had a sign posted for a bit when it first opened (RIP Bad Dogz Bar & Grill) that they weren't associated with whatever the Schott's inclination was off I-10. Guy ringing up my steaks offered a little chisme when I asked about it. As you mentioned it had something to do with brothers or an uncle, and I want to say an uncle hiring off a kitchen manager who had all the recipes. The meat market website says the Helotes and AR stores are the same group.

Used them for years. Switched about three years ago because Schott's is closer, and man Schott's stuff just tastes better.

There are two Schott locations in Helotes. The "meat market" in Helotes closer to 1604 is one group (same as AR I believe), while the "country store" and taxidermy and processing location in Helotes farther west is the other cousin/brother.
