How long do you want to ignore this user?
I have been volunteered to cook chili at work tomorrow. I have a great recipe that uses ground beef that everyone loved last year.

My boss has donated some ground antelope for use in the cooking. I have never cooked with antelope but am open to trying it out.

Can someone give me some ideas on prep? I have cooked deer chili, and I know it has less fat content. Do I treat antelope the same?

What kind of antelope? Pronghorn (I know, not a real antelope)? Something exotic?

I would treat it the same as venison, and of course, NO BEANS.

If its pronghorn, you will likely need to add some fat in, otherwise it gets pretty dry.

Tell your boss that you used the antelope, but use pork instead.

It will be the best antelope that he ever ate!

You would be surprised... it gets an almost dry/crumbly texture to the meat, despite being chili. Its just not a great meat- especially for ground...

i made some pronghorn chili the other day...worse smelling meat i've ever butchered...best tasting chili though. i was pleasantly surprised. Also, i normally add pork to my venison for making chili to add some fat. i used straight pronghorn and it was fine (makes me wonder if my chili ever needed that extra fat/pork).

probably want to mix some ground chuck with the ground antelope not only so it adds fat to render into the chili but also so it doesn't taste too gamey to some of the office personnel.

1 lb venison
1lb hot pork sausage
1 15 oz can of tomato sauce
1 14 oz can of beef broth
2 tbls light chili powder
3 tbls dark chili powder
1 tsp garlic powder
1 tsp paprika
1/2 tsp salt
1 tbls cumin
1/2 tsp pepper
1 tbs caldo de tomate
1 can chilis
4 cloves garlic
2 jalapeños
1 Serrano
4 tbs brown sugar
1/2 onion
Bacon
1 dried Guajillo pepper
2 ancho peppers

Sub pronghorn for venison. I blend all the peppers and onion together on a chopper, cook in oil, add meat, brown off, add everything else. Simmer for 30 minutes.

Won a chili cook off a couple of weeks ago - but i am in TN, so it's easier.

I ended up getting a couple pounds of chili meat at the butcher shop and used my recipe.

I'm a little biased, but it came out great! We shall see how everyone else likes it today at the company lunch.

Our floor manager ground up some brisket and did the drop chili. Looking forward to trying that one.

This last batch, I used about 1/3 skirt steak cut up into 1/2 inch cubes, 1/3 hot pork sausage, and 1/3 venison. It was delicious.

I added it to the antelope because he wasn't sure it was mixed with pork

The OP said he was volunteered. As the volunteered chef, the boss (who is NOT the chef) does not get to make big boy decisions on the matter. He can be offended and sulk for the duration of the event.

Kind of like beans in chili?

If you want beans and there aren't any, then make your own. If there are beans and you don't want any, then make your own. In either case, don't whine about it.

Can't help with game meat… but here's some chili I'm cooking for a cook off. Made with bacon fat, ground beef and BEANS and home grown chilis. Let's the Internet rage battle continue…

Once it cooks down and starts binding together it will be thick and delicious. Beans and meat will meld together and be perfect.

Sounds like your boss wants his meat. Just use it and make your regular chili and it will be great. Why mix other meats it's chili! Oh and definitely don't use beans unless you're a yankee……
