What is doing this to my trees

ChatGPT says bucks rubbing is the most probable cause, not sure how accurate that is. It identified some other potential causes like beavers, hogs, or porcupines but said it didn't match your pattern.
No goats or beavers, but do have deer and hogs. Buck rub was first thing I thought of, but have never seen before.
My vote would be beavers
A porcupine will do that.
I am in Northern Gonzales county. I have never seen a beaver or porcupine in the area. All the shavings are bark. I would think a beaver would do more damage than that?

Like Mouth said, my guess is a porcupine stripping the bark. Got any cell cams laying around you're not using? I'd set up a couple to get a view of each of the trees and see what it is that is damaging them, but I'm thinking it's a quill pig.
Edit: After zooming in on your pics, I'm almost positive it's a porcupine. All of the teeth marks are a dead giveaway.

What ever it is I would put some mesh wire around them. They might die already from that amount of damage. I vote beaver also did it.
My thought is that a beaver would have chewed into the trunk proper.
If it is a porcupine, I hope I find him before my Jack Russell does.
Seen that damage at Buffalo Lake NWR. But usually high up in the tree. Which is how I learned that porcupines climb trees

That is definitely a porcupine. Beavers will take the tree down or at least do more damage.

They are, just not very deep. They are eating the outermost living layer
I would find what did that and unalive it asap.
Nutria will also eat tree bark, particularly in fall or winter when there is less growing that they would rather eat.

Porcupine. As Junction71 says. We had them do that all the time in Kimble County to some of our trees. If I caught it fast enough I would treat the wound heavily with tree dressing and they wouldn't always die.

Agree it's a porcupine. I had one kill my fruit trees by eating all the bark off the trunk like that. I found him in my yard and discovered he was severely deficient in his USDA for Lead. I cured his ailment.
Spoke to neighbor next property over which has a creek running thru it, about 1/4 mile to the west. Showed him pics and he said he had beavers kill some of his trees. Started like this and they came back later to finish them off. I sprayed protective coating on these and added wire. Will see if the survive?

My Jack Russel learned the hard way about chasing rabbits into cactus - took one time and me pulling cactus needles out of him for 2 weeks and if he sees a rabbit running towards cactus he just stops and walks off now
I have pulled quills out of Brittanys over the years.
Most dogs learned after the first encounter. It's a two person job. Bring scissors and cut off the ends of the quills to release pressure before removing.
