Hi guys- killed a few Sandhills this morning outside El Campo. Trying to figure out the best way to marinade/cook them. They've been picked and have the skin on.

Anyone have any recipes they like? I trust this group more than a typical Google search recipe.

I cook them like steak bits. Season with your favorite steak seasoning. Cook hot and fast on a cast iron skillet to medium rare. Saut some peppers and onions in some bacon grease or beef tallow then sear the piss out of the chunks of steak in there with the peppers/onions/mushrooms.

Whole piece is good too, but my favorite is the steak bits method.

We like to season overnight in Allegro. Then sprinkle with salt and pepper and grill each breast over a hot fire to medium rare. Delicious!

Wow, I envy you. The Sandhills winter here in East Tennessee. You can't get within 100 yards of them before they take off and squawk (or whatever they call it). Beautiful birds.

i like to butterfly them
soak in warm salt water to get a lot of blood out.

I'll take a meat hammer to each breast and hammer it down to the meat is not so thick. I'll throw it into a cast iron pan for a few minutes per side and grill to medium rare. That's it. Salt and pepper. Don't marinade or do anything else.

I hunt crane every December around Lamesa, TX. There are thousands of them out there.

Season with Hardcore Carnivore, grill over high heat to mid rare.

We cook the breasts just like a steak.
I always ask our guides to keep all the hearts from our group and I make kabobs with them.
One trip I had the guides save a bunch of legs. I smoked them and flaked the meat off and used it like pulled pork. Tried to eat one leg like a turkey leg. Tasted ok but they got hella tendons, more than a turkey leg.

Lubbock and the surrounding area is a prime spot.

I like crooked wing outfitters the best and I have hunted with them several times

Legs are what we are most concerned with. I'm thinking we may pressure cook them.
