After living in Houston on and off for almost a decade while growing up in Dallas and living here for 3.5 years during the late 2010s,I feel I have the correct context to answer this question

IMO Mi Cocina is pretty much as good tex mex as El Tiempo.

i invite you to get your Tex-mex elsewhere.

There's a lot of bad opinions on this board, but this is up there with the worst.

Manny's Uptown can be good depending on which one you go to.

Hererra's can be good depending on which one you go to.

I can't think of Mia's without remembering this moment.

Sat at that table right outside the kitchen many times myself.

Mariano's beef fajitas are more than just OK . I've been to El Tiempo and they are just as good.
+1 for Mariano's

Tex-Mex:

99% of it tastes exactly the same regardless of which city or restaurant you are in. There are only a handful of places that could arguably separate themselves from the pack and most of those actually do food that is beyond Tex-Mex.

Change my mind.

Kind of agree, assuming you are talking about Texas. Go far enough north and they can screw up even the basics. Chips, salsa, margaritas, and fajitas are where places can stand out, for me.

I am. Go north and I'm not sure what you even call it. It's not Tex-Mex. It's not anything.

I'll give it a try

Each place has a certain "flavor" to their food- how their chips and salsa help start the meal, to some appetizers like their queso, and then onto the main dish which can have many varied options depending on where you go.

How each of these places prepares all this stuff is a big part of the fun of trying so many of them. Most of them are really good, and it's fun to see how one place's queso stacks up to others, and how far can some places push it and still call it queso? That's one of a THOUSAND examples of comparing different dishes at these spots- their guac, their fajitas, their enchiladas, their beans- which places dial up the heat, which places load it down with onions and cilantro. And ultimately, how does that all add up to your own experience at that specific place?

That's when you know you're in a true hotbed of a cuisine - so so so many places offering slight variations on it, that they all kinda start to bring each other up in quality and style of food.

It's exactly like pizza in NYC- think of the Dave Portnoy pizza reviews

Tupinamba Cafe on 75

Aggie owned (or at best a lot of A&M stuff and a steak named after RC. One of the better places and has some more traditional Mexican food for this gringo who grew up on the border.

Another more traditional Mexican place is tipicos in Carrollton (and another near Love Field)
Tupi's is Aggie owned. It was founded by the Dominguez family a century or so ago, but Eddie Dominguez, who graduated from A&M in the '60's, was running it up until a few years ago (may still be, but we moved, and I haven't been there in a few years). Always enjoyed it.

My favorite place is Pepe's & Mito's in Deep Ellum. I've been going there since 2002 and have never had a bad or even "meh" meal. Their tacos al carbon, chipotle enchiladas, tacos al pastor (and Norteno) are all really, really good. Their salsa and margaritas are also muy bueno.
Second the chipotle enchiladas.

Get the mezcal drinks specifically the Oaxaca. They are one of the few Mexican places around that keep a full bar of mezcal.

I grew up in Houston and have now lived in Fort Worth for 3 or 4 years now.

Honestly the Mexican food here blows compared to Houston. It's the only thing I miss.

I want a cyclone Anaya's or escalantes

Bobby V's always had the best Monte Cristo sandwich - better than Bennigan'ss IMHO.
