Charred really isn't a good word - seared on a super hot grill to get a really good crust is what it is.

And it is delicious. It's how a lot of wagyu is cooked as well, though they probably don't call it Pittsburg and have some super fancy name that everybody geeks out over.

Unless you think this is ruined or something. Try it sometime, you might like it.

Yeah, I prefer my steaks to be seared pretty well on the outside but mid-rare. I'll except medium but that's pushing it. I don't like my steaks rare or blue.

I didnt say it was, these are just pictures showing what a Pittsburg style sear is like.

Yes! It was where the Target/CFA is now. In the late 90's, a colleague scheduled a business dinner there to woo a potential hire and it did not go over well. After that, any dinners for our team were scheduled for either Taste Texas or Las Alamedas (RIP).
The one in Dallas was still open until recently. Went there for a niece's birthday about 15 years ago. Looked exactly like the one in Houston did when I went in the 70's. And I'm pretty sure the community block of cheese on the table had been there that long too.

Las Alamedas was special. That's where we would take out-of-towners and it was always a hit. Great happy hour too. F'ing sad that a rent dispute killed it. Now it has sat empty for 10 years. Good call, landlord.

Can't believe the Las Alamedas lot has sat empty for so long. You'd think someone would have built something there by now, unless whatever the landlord is asking is just ridiculous.

Yeah, Las Alamedas was a great place for a little group happy hour. Amazing that nothing replaced it.

Odd pick by me… but the best steak in Houston is at a Mexican place… Xochi in the Marriott
