I will be travelling to Far West Texas in a few weekends. Are there any restaurants that I should try? I'm already planning on going to La Casita in Alpine. Is there anything worth noting in Pecos, Monahans, or Balmorhea?

Hit up Alicia's in Alpine for breakfast if you can. I like the "trash can" burrito. I hit up La Casita about once a year but I have Alicia's every time I'm in town.
The Fiesta in Pecos on 385 is really good. BYOB and Tacos Alambre with extra jalapenos.
alfredo's in pecos.
The riatta in alpine is a must

Its sad that being from El Paso that I don't consider that Far West.

At fish camp, I got the same surprised remark at how far away I live as the guy from Maryland.
Cattleman's is actually in Fabens east of El Paso. Was there this past weekend, best steak I have had in a long time. And the pineapple cole slaw was great.

Go to Mias in Marfa or the resturant in the Hotel Paisano
The Gage Hotel in Marathon is pretty upscale and good food also
El paso doesnt even count as Texas, Texas ends at Van Horn

Here's another good West Texas restaurant: Leo's Mexican food (original location) in El Paso.

And you can't beat a deal like buy 12 gallons of milk, get the 13th free!
I'll plug the Starlight Theatre in Terlingua. One of my best meals ever were the chicken enchiladas after a very cold day working in the river. Their pork tenderloin in chipotle reduction is great also.
Just tried Hitchin Post in Ozona. Good eats.
The Hitchin Post in Ozona is good but if your in town around lunch find a place called Bobby's. IT is some of the best Mexican Food I have eaten.
Personally I would stay away from Pepe's.

Large block of sharp cheddar. I'm talking like 4x4x8 inches. Comes with it's own slicer.

Check out the Gage Hotel's restruant in Marathon.
My favorite is the Hotel Paisano's resturant and "Mias" down the street in Marfa.
Finally, if you get as far south as Terilunga, then chekc out the Starlight Cafe.
All have excellent food and great atmosphere.
Mia's in Marfa is my favorite, but none disappoint.
