I have some friends who ranch out west of Pecos between Toyah and Van Horn. We go out there a couple of times a year to help them work their cattle, and we always stock up on groceries and everything else we need in Pecos. This ranch is about 50 miles north of Toyah with most of the miles on dirt roads, so it's imperative we get everything we need before leaving town.
While I've only visited there and went to places like the grocery store, feed store, and restaurants, Pecos has never impressed me and it seems like a pretty rough town. I know I wouldn't want to move my family there and put my kids in school. Also, there doesn't seem to be anything for a single person to do there with the exception of the rodeo during the week of the 4th of July. Being that you won't have to fly every day, I would try Odessa or Monahans.
When in Pecos, go to the Burrito Depot. It's out on the southwest edge of town where the Balmorhea Highways crosses under I20 across from the cantaloupe packing facilities. They have some of the best burritos and homemade hot sauce I've ever eaten. They are only open for breakfast and lunch though.
