Don't rule out 2 door coupes. Mine has leg room for miles because there is a very small back seat. My 6'7 buddy fits in it just fine. The downside of it is it being low to the ground and not super easy to get in and out of.

You really need to go to the car show or CarMaxx where you can sit in a lot of different cars. I did this while shopping coupes for my wife. Infiniti G37 and MB SL 500 fit ok but Lexus SC 430 didn't.

I test drove a Ford Bronco Sport last night and it's the leader in the clubhouse for now. The roof is at least 4-5 inches above the top of my head and the legroom is good. My kid are short so no worries about rear leg room.
While I was waiting for them to bring one around to test drive, I was looking at the Mustang, and the sales guy was trying to convince me I could fit. Got in and the leg room was OK, but my head was not just touching, but wedged against roof. Guy is like, "See, you fit!" and I said, "Yeah, but if there's any sort of accident, I feel like I would be killed instantly." He said, "Yeah, I guess that would be bad."

Graduating from the family truckster next month. I really don't a pickup or another SUV, just a sedan that is safe and gets good mileage and can accommodate me being 6 ft 8.
