To be fair, the OP's question is "what do you do when you get the new car itch". Bob Kelso answered how he handles it.

You buy an old CJ 7 after drinking on the golf course
Giggity
You can get the Jeep back if you want to scratch that itch. I still love it but daily an SUV now and am thinking about moving to a two seater for my fun car.

Literally watch my families future be completely altered because of car notes. That money can go to more wealth generating vehicles.
I've learned that the wishing and wanting is the thing you enjoy. And when you finally get it, it wasn't the shining thing you thought it was going to be.
Guns don't kill people.
Spoons don't make people fat.
Car notes don't alter families futures.
Although I have never had any debt outside of my primary residence, and I likely agree with your approach to financial decisions, I get tired of the virtue signalling and condescending statements about others financial decisions on this Automotive forum.
I was fortunate that my parents had the ability and willingness to pay for my education. I was fortunate that my father learned from his poor financial decisions and taught me from his mistakes, rather than having to learn from my own financial mistakes. Not everyone gets those advantages.
I can be happy and supportive of someone's purchase(s) without projecting my own financial opinions. Everyone should try it.

A little over 200k. It does have one minor issue with a transmission shudder when in normal drive, but when I put it in "manual" it goes away. I feel that it gets to 5th gear too early to increase fuel economy while in the automatic mode.

Read TexAgs Automotive Board and see what people are paying for new vehicles. Itch goes away fast.
And their reliability.

Rent a car and get pissed with all the nanny tech.
- Can't pair a Bluetooth device while rolling, for "safety"
- Lane assist that tries to overpower the steering. I'll steer where I want, thank you.
- Auto start/stop (this one really grates on me as I hunt for the disable button and on some occasions can't find it(
- Having to go through endless menus on a giant touchscreen to perform the most basic functions
- Realizing that everything else in the vehicle feels cheap and flimsy because they had to hit a price point while tacking on all of the above
