How long do you want to ignore this user?
My wife has been cutting out gluten due to having Hashimoto's disease and has felt better since off gluten. However, we went to Switzerland last week and she had some breads and other like things and noticed that she wasn't getting the same stomach issues as when she eats breads from here.

Do any of you have experiences with issues eating store bought breads that don't happen when you make your own bread and get wheat flour from Europe?

European wheat varieties are lower in gluten than those in the US/North America, so the resulting flour is also lower in gluten (but not gluten-free).

So, it stands to reason that any ill effects someone feels from consuming gluten might be reduced if the amount of gluten is reduced. If you are completely gluten intolerant, though, then this wouldn't be a solution.

We moved to Dave's killer bread trying to eat more clean and it is great. It looks like they do have a gluten free option.

I love Dave's and that is exclusively what I ate until I went gluten-free. We found a gluten-free bread we really like, but I would love it if Dave's would start making one.

What is the GF bread you like? How was Dave's on your stomach when you were eating it?

Canyon Bakery is the one that we like, at least that we can get locally in Austin. We were in the PNW last week and got Franz Bakery there, which was outstanding. They are regional up there and do ship, and I liked it enough that I am tempted to have it shipped.

The fact that I eat gluten-free now has much more to do with my wife than it does with me. She figured out that gluten products affect her poorly (she ate little to none before marrying me) through an elimination test, and she cut it out totally. I chose to cut it out, too, to be supportive and also to make grocery shopping and cooking easier. Now that I have cut it out, if I do eat something with gluten in it, I often won't feel 100% for a few hours after but then bounce back pretty quickly. So, I can see that it does affect me some, but it's relatively negligible.

A lot of words to say that I never had any issues with Dave's, but I also don't think I am that sensitive to gluten overall.

We used to do Dave's back before it was like $6 a loaf. We will often get these from Kroger. Convenient since it is frozen and can have a few on hand.

We do make our own unleavened bread from time to time; simple and delicious

I use einkorn flour for my sourdough recipe. It won't spike blood sugar (tested after 2 big slices) and I'm pretty sure it's gluten free.

I just want to make some fresh bread. Outside of a perfect steak off the grill, fresh baked bread with melted butter is one of the best things to eat!

I could not agree more! French bread, sourdough, focaccia, Portuguese bolo levedo, raisin bread… I love it all!

I recently discovered this butter, and it takes bread to a whole new level.
