Are there any good/easy to follow reads out there about their empire? I know the general gist of what they did, and I've heard most of the legends but would like to go a bit more in depth.

Do both Apache and Aggiefan's suggestions! I did the audiobook route and Carlin. Both are long and you will hate that they have to end.
