Fred Anderson's The Crucible of War is the classic (long) study of the French and Indian War. William Fowler's Empires at War is another good study from a more imperial angle. Daniel Baugh's book, The Global Seven Years War covers the struggle across the Americas into Asia. Franz Szabo's The Seven Years War in Europe covers the major actors and battles in Europe, though be warned that he is not a huge fan of Frederick the Great.

Anderson has a condensed version of his book called The War that Made America

I read The Crucible of War. Yeah, it is long, but it grabbed me from the opening with a graphic description of a raid on a French camp.
