Sumlin sure is a jerk to the non ESPN folks sometimes...

To be fair to Sumlin, when asked a question that can be answered with one word he does that. Reporters need to ask questions that require a more open ended response.

Who's the guy in the background on all of these videos?

You could look at it that he is being a jerk, but some of those questions are really lazy. He keeps the media on their toes, and makes them prepare and try a little harder. Nothing wrong with that. There are plenty of things to criticize Sumlin on, this one is pretty far down the list.

He's usually pretty arrogant this time of the year....

Wait till later in the season when he gets pummeled 4 games in a row....

That's usually when he remembers that he's clueless..... This realization usually gives him a little modesty.....

& if the stars align, he may actually admit he made a mistake, or a bad decision

These interviews would be much better if you could hear the questions being asked.
