While it would, of course, be highly dependent upon the wording of the contract, the new school might be able to get around the offset by paying an entity (especially one with multiple members) instead of the coach directly or by issuing a promissory note in lieu of salary.

Carefully worded offset language should prevent something like that, but if it just says something like "if coach takes another job, the buyout amount will shall be reduced by ..." The vast majority of contracts written contain fairly simple language -- or, at least, they don't provide many provisions that cover things that aren't foreseen or anticipated.
