Any suggestions on where my wife and I should go to dinner while in Vegas for our 20th anniversary? Steak house, Italian, Americana... anything goes really.

any restaurant at Fontainebleau looks top notch perfect for an anniversary or birthday....papi steak, mother wolf, KYU, etc...

SW Steakhouse is the obvious answer.

Delilah at Wynn if you can find a way to secure a table. SW at Wynn also a solid choice, as is Sinatra, also at the Wynn. But Delilah is on a whole different level as a dining experience. Good restaurants all over Vegas, but imho the best collection of good restaurants in one place exists at the Wynn.

I agree with the poster above on Delilah. Went in December and had a table on the patio to watch the waterfall show. Great meal. For Italian I stick to Carbone at Aria. The back room is where I like to sit. Smaller room so less noise.

Some nice Ramen places off the strip. Can get a nice dinner for 2 for $20. Then give her a gift card for a massage with the difference. $profit.

Very underrated option here. Nowhere near the overall atmosphere of some other places mentioned, as it sits in a shopping mall, but excellent food and service and I've never had a bad meal there.

Any of these are great options:

Prime at Bellagio
Joel Robuchon at MGM
SW at Wynn
Bouchon at Venetian

If you go to Prime, request a window seat so you can watch the fountains.
