Thanks for the tips. We're staying at Casa Don Quijote and looking at Tres Races winery for the 5 course tasting menu. Bajio Go looks like a good option for airport transport. Of course the Rosewood Sunday brunch sounds like a good time as well.

If youre a beer drinker beyond cheap Mexican beer, the local beer is Cerveceria Allende. They have a great Baltic Porter. The brown ale is good too and more common in restaurants than the Baltic porter

We didn't stay there but my wife and I walked in the lobby and checked it out. Looked really nice, lots of cool artwork.
