How 12th Man Coffee got started!
What's the Buzz Coffee Owner and Roaster Rodrigo Chavez was previously the manager of the Norman Borlaug Institute's Resilient Coffee Project in Central America, which involved USAID funding for programming involving improving coffee crop resiliency and quality among smallholder farmers in Honduras, Guatemala and El Salvador.
After the project ended, Rodrigo wanted to continue to support and improve the lives of the small coffee growers, so he decided to obtain a license to start producing the 12th Man Coffee, which proceeds go to the 12th Mn Foundation as well as to the Center for Coffee Research and Education.

How is Specialty coffee different from commercial coffee:
The term 'Specialty coffee' is used to refer to coffee that is graded 80 points or above on a 100 point scale by a certified coffee taster (SCA) or by a licensed Q Grader(CQI).
Premium coffees don't have a grading system, so it's near impossible to determine the quality of the coffee.
Specialty coffees are coffees at their peak and are different to other coffee because Arabica coffee has been grown at the perfect altitude, at the correct time of year, in the best soil, and then picked at just the right time. All this translates into some of the most exciting and tasty coffee in the world.
4 Ways To Identify Specialty Coffee
*The coffee origin test. Does the coffee packaging transparently give you information about the coffee's origin region, processing method, or farm. Usually, the more information a roaster gives you, the more proud they are of their high-quality partner farms.
*The roast date test. Does the coffee packaging give you an exact date when the coffee was roasted, or a vague "best by" date? Honesty about the specific roast date indicates that the roaster prioritizes freshness and isn't trying to trick you into buying stale coffee. Roasted coffee starts getting stale after 30 days.
*The natural flavor descriptor test. Does the company describe their coffee with detailed flavor notes, or are the descriptions bland and general? Specific flavor notes (like blueberry or cinnamon) tend to indicate higher quality coffees. No artificial flavors can be added to the roasted coffee bean.
*The roast level test. How dark are the beans? Are they oily and black-as-night? Dark roasts destroy the unique, natural flavors in coffee and end up tasting ashy, dull and bitter. Specialty coffee needs to be medium roast.
We welcome visitors to stop by to participate in the process with studio tours, cuppings, and a full coffee bar for a taste of the final product. For the curious drinkers and growing coffee shops, we even host classes in brewing and bean history, and train baristas for the life behind the bar.
