I have two 50 gallon and wondering if anyone has a contractor that did a good job with this. The piping will also need to be replaced.

I was prepared to spend up to $10K and the owner asked me questions about why and what I expected and the talked me out of it based on our house and needs. That is honesty. He could have done it and made lots of money and not thought anything about it, but he was more interested in what we needed and would work for us.
We did a major remodel and added an additional water heater. Wife wanted tankless but when researched we found the same thing. One thing we did add that is pretty good is a recirculation pump so when you turn the shower or tub on, you get hot water in seconds instead of purging the whole line.
