Anyone eat Parisa?

We have a new meat market between Helotes and pipe creek that has this in their counter. I couldn't remember what it was until I asked the butcher. It looked pretty good and may go back and buy some. Anyone ever have problems eating it??

I'm 35 and I grew up around this stuff...never gotten sick. The meat gets cured. I've never made it myself, but I know plenty of folks who have.

I grew up around it too... and there was a lot at a family event last month.

A lot of people got sick, even with the lemon cured meat, but, to be honest, we can't say for sure that there was a connection as that nasty stomach bug was going around at the same time.

All in all, not a fan.

Love parisa! Extended family lives in the Castroville area and used to always have some at family get-togethers. The parisa at Dziuks was always fantastic. Never got sick and dont know a single member of my family that has either.

Yes, it's great and now we don't have to go to Castroville to get it! They have some special kind of beef (Japanese breed, can't remember the name) that is excellent. I also buy a little package of dried sausage every time we go that lasts about 30 seconds after I get home and my kids spot it.

Also have family in Castroville and we have Parisa all the time with no problems. Its sooooo good.

Buddy brought some by last week from Dziuk's. .love the stuff. Hate that I can't get it unless I go to Castroville/Hondo. Saltines, parisa and beer....can't go wrong

Be brave and make it yourself. There are recipes online. As long as you are diligent in your food safety, you've got nothing to worry about.

The Country Mart in D'Hanis is better than Dziuk's. Hernandez Meat Market in Hondo is better also. But Dziuk's is still damm good.

Saltines, parisa and beer is the bomb.

Never heard of anyone get sick from eating parisa.

Never had country mart in D'hanis, but our normal go to is really Alvarez in Hondo. That's my favorite. Parisa and Alsatian Sausage every time I go by.

This. My mother is from D'Hanis, and we all grew up eating parisa. As stated previously, saltines, parisa, and beer is a match made in heaven/Medina County.

Thanks for starting this thread. I had some parisa at a tailgate I stumbled into a couple of years ago and could not get enough of it. I could not remember the name of what it was, only that the guy brought it from Hondo. Next time I drive to the Frio I will be stopping for parisa.

The only place in Hondo that sells it is Alvarez Market.

Delicious. I prefer the Country Mart version, as that's what I grew up eating. I've resorted to calling it steak tartare for any one that I think will freak out over the safety issue.

Parisa is a dish that you love or dislike. Nothing on between. A tube of saltines and a pound of parisa..fine lunch. Need to catch the band sometime.

I love parisa! Tried it from a place called Devine Meat Company in Devine which is right next to Hondo/Castroville. The owner is an Aggie too!

Anyone know of places to get parisa outside of the hondo/castroville/dhanis area?? Leaving in Dallas I am starting to crave some, however I don't really trust myself to make it, haha

Bump.

I'm a Texas panhandle born fella and I've never had this in my life. Remembered this thread and decided to give it a go.

Took 1lb top round and cubed, partially froze, and pulsed it in the food processor.
Mixed that with 1lb freshly grated American cheese, 1 medium yellow onion, 2 large jalapeos, tsp salt, probably a tbsp pepper, and the juice of one big lemon. Got it in a Pyrex for tonight, will see how it tastes tomorrow. Figure I'll need a snack while I smoke a brisket. Wish me luck!

And I should say that since this original post I've consumed about 100 pounds of parisa and saltines, washed down with cold beer.

Update: don't hate it, don't love it. It kinda hits the same spot as a wheel of summer sausage with cheese on a cracker. Probably won't make it again but I wouldn't turn it down if I came across it again in the future.
