Recipe (this makes 4 servings, but easy to make 1 bunch of asparagus feed 5, just add another serving of the other ingrediants)
1 bunch fresh asparagus. On the thinner side works better.
1 package of sandwich meat ham. Thin sliced works best. Oscar Mayer or the like.
4 slices of bacon.
4 mozzarella sticks. Aka string cheese.
Assembling is easy. You basically arrange the asparagus around the cheese, wrap the ham around the asparagus, wrap the bacon around the ham, and secure the roll with toothpicks. The ingredients have plenty of salt, so no seasonings needed.
We cook these in the oven at 350 for 20 to 25 minutes. They can also be cooked on a grill, just keep them rolling and take them off before the cheese starts to escape too much.
It's a nice serving of vegetables that your kids will beg you for. Just cook them when the rest of the meal isn't that hearty.
If you have younger kids, one of these is a nice meal, especially if you throw in a dinner roll or some other carb. Feed them this and cook you and your wife/husband a nice steak to go with it.
For teenagers, these things usually get eaten faster than the meat at our house. They will fill up tummies with good food without breaking the bank.
The bacon is helpful because it keeps things together. Tanya, you could probably make do with large pieces of sandwich meat and more toothpicks. The bacon is there more as a piece of structure than for flavor. But, let's be honest, bacon never made any dish worse.
We have substituted other types of lunch meat for the ham. Roast beef, turkey, sliced chorizo, prosciutto, bologna. It all works, but the only one that is disappointing a bit is the turkey.
