Pork loin on the smoker tomorrow

How long do you want to ignore this user?

Thinking of doing 2 stuffed pork loins.

One, wrapped in bacon and stuff with cream+cheddar+jack cheese.

Another, stuffed with creamed corn, bread crumbs, and chopped jalapeos - glazed with bbq sauce

Any thoughts? Likely going to use some meatchurch rub.

The bacon wrapped loin could benefit from the correct glaze. I really like my balsamic fig glaze on those. Turns the bacon into meat candy!

If the boudin is cooked prior to stuffing, then yes. If it's raw, the pork loin will be shoe leather by the time the boudin is cooked.
