1. I always love a good Wassail.
Method A (quick route)
Crock pot
4 quarts apple cider
A couple of oranges and lemons with dozens of cloves poked into the peels (dont go the juice route, its so much better when the heat pulls the juice out through the cloves poked into the peels)
Some mulling spices in a tea ball (nutmeg, cinnamon, allspice, star anise, cardamom, etc)
Fills the house with awesome Christmas smells and tastes great.
Method B (long route)
Core out 4 apples and fill with brown sugar. Bake at 350 for 30-45 mins.
Add to a crock pot or pot on the stove with the same ingredients as above
For both, add some port wine or decent cognac for a more lovely experience.
2. I also tried out a new cocktail inspired by Wassail.
2 ounces Applejack Brandy
1 ounce fresh squeezed lemon
1 ounce fresh squeezed orange
2 TBSP (good quality) maple syrup
3-4 Cloves
Dash of nutmeg
Dash of cinnamon
Dash of allspice
Mix together and let sit for 10-15 mins so the spices soak. Then add ice and mix again. Strain over an ice ball. Delicious.
