Here's the recipe from Peli Peli. I've made it a few times and it turned-out great each time. Very easy too.

Best I've ver had was at the Calypso Grill in Grand Cayman. This recipe is as close as it gets without the beach and sunsets. If you don't have one, I recommend getting a kitchen scale to weigh the ingredients properly. Also, if you have an international market close by, you'll get much better dates than you'll find at HEB
