I'm getting really tired of the garden salad I make and the bag salads from the store. I consider my self a decent cook and can duplicate most dishes.

Haven't been able to do much on the salad front.

What are your favorite dressing and salads?

3 cup chopped red cabbage
14oz spiralized sweet potato
Juice 3 limes
3 tbsp honey
3 tbsp olive oil
2/3 cup chopped cilantro
3 tbsp peanut butter
3/4 cup peanuts
4 green onion diced
1/4 tsp cumin
4 shakes red pepper flake
2 tsp salt
Pinch pepper

Lime, honey, PB, oil, salt, cumin, pepper, red pepper all wisked together to make dressing. Helps to heat PB and honey in microwave for 30 seconds before wisking. Pour over cabbage and sweet potato, sprinkle in cilantro and peanuts. Mix. Let set for 10-15 min.


Let me tell you this is the most surprising thing I've had in years. It's awesome.

We've found these to be excellent. (Disclaimer: not a chef or accomplished home cook in most instances)

This is great on salads but our favorite is on Mahi.

We love avocados and cilantro. Again, great on salads but I love it with nachos, tacos, etc. Very versatile.

Start making your dressings homemade so they are alway fresh. Bottled dressing are ass and take up too much space in the fridge anyway. A relatively simple vinaigrette (1 part acid to 3 parts oil) only takes about a minute to come together so very little effort required and infinitely better than something that is made to be shelf stable.

My mainstays are Greek, Ginger Lime, Balsamic, Raspberry, Chipotle, and Citrus vinaigrettes. Green Goddess in the Spring when my herbs are fresh is one of my favorites and highly underrated. Homemade ranch and Blue Cheese when not worried about calories.

For the Greek dressing I use 2Tbls red wine vinegar, 6 Tbls olive oil, & 1Tbls Kronos Greek season. I'll put all that into a small bowl, dip the tip of a small whisk into Dijon, and whisk to combine. Makes half a cup which should be good for about 4 average salads

Agreed on the homemade dressings. One I've used recently that was simple and tasty...

* 6 tablespoons extra virgin olive oil
* 3 tablespoons lemon juice
* 1 tablespoon good honey
* sea salt
* freshly ground black pepper

Steak salad:

-make blue cheese butter. Add 2 tbsp softened high butterfly butter with 1/3 cup crumbled blue cheese. Add 2 tbsp of finely minced green onion a dash if pepper, mix until incorporated.
-cook 1 large very thick either ribeye or strip steak cooked no higher than medium on the grill or reverse sear.
-place blue cheese butter on top of steak and tent.
-while cooking steak caramelize onion and slices fennel bulb.
-serve slices of steak (with blue cheese butter on too) over bed of caramelized onion and fennel.

You have a "sauce" with your blue cheese butter and the drippings, roughage, and a meat and dairy.

I'm blessed with 3 kinds of lettuce and spinach in my garden. I'm also still pulling 2 dozen or more orange cherry tomatoes each week.

This is my go-to for a quick, simple dressing. Squeeze of lemon and some EVOO, salt, and pepper. Add a little dijon mustard if you like, but I usually skip it.

I usually use some sort of spring mix for the greens, and then add whatever other things you like. If I am roasting a pork loin or grilling pork chops, I usually add the mustard to the dressing above and add green apples to the salad as a light, bright tasting side with some good crunch from the apples.

I have a simple Asian salad that's pretty good.

Lettuce or garden mix
Shredded carrots
Green onion
La choy chow main noodles
Teriyaki chicken (I buy the premarinated bag from HEB)

I pair it with the below sesame ginger salad dressing. The ginger makes it taste awesome.

Blended Greek Salad

Ingredients
12 oz Romaine Hearts chopped
6 oz baby spinach
4 red medium large tomatoes, quartered
1 large cucumber, peeled and sliced
1/4 red onion, cut into thin strips
1/4 red bell pepper, cut into thin strips
10 greek kalamata olives sliced or whole
6 oz good feta cheese crumbled
6 oz good mozzarella cheese shredded


Greek Dressing

1 quarts high grade olive oil
cup garlic powder
cup dried oregano
cup dried basil
cup pepper
cup salt
cup onion powder
cup Dijon-style mustard
2 quarts red wine vinegar

just started a whole30 and some of that slaw is non compliant - but does look like something my wife would like so plan to circle back on it.

It's a very hearty side. Eats very filling. Serve as a sole side maybe.

What's non compliant? The PB and Honey?

Yea pretty much go through a lot of Greek Dressing with salads and using it as a marinade.

A simple vinaigrette is one of those things that really benefits from using good ingredients. There aren't enough other ingredients to hide behind. I use these two for nicer dinners to make it a little more special. At these prices, certainly not an everyday thing or for marinades.

So what I would say is this recipe makes a BIG OLE MF-ing BOWL of this stuff. It eats very substantially. Very filling. You don't eat a lot of it. I'd say the recipe makes 10-12 maybe more servings. So those 3 tbps PB and honey are spread pretty thin.
