New Range Questions

We are remodeling our kitchen and thus I'm in the market for a new range. We are thinking higher end, so Thermador, Blue Star, Wolf etc. and I have a few questions for the collective group:

1) How many btu's is enough in a single burner? I don't cook with a wok (maybe I would in the future?) so is there any other reason to need something in the 20k range or can I "get by" with 15k-18k btu burners?

2) In a convection oven, how much better is electric than gas? For someone who doesn't bake much (mostly oven fries or roasted veggies) is the price difference between duel fuel and a gas oven justified?

3) How much hood do I really need? I see the standard is 10cfm/1000 btus. Do I really need that much if I would rarely, if ever, have all the burners going full blast?

4) Not range related but is there anything that the matching, high end refrigerators offer that mid-level don't? I don't seem to be able to justify the cost difference. In my mind it keeps food cold...that's about it.

1. My Dacor 6 burners are 15 and 18k. The 18 boils fast and gets as hot as I ever need. Usually have to keep it turned down quite a bit.
3. Go as big as you can afford. Makes a difference.
4. No a waste.

I have this one and love it. It was rated higher than the Wolf/Sub Zero according to a few publications

Its got good high and low output performance and I have cooked for as many as 25 people on it and never filled it up.

We went with Monogram but haven't moved into new house yet so I can't tell you if it was worth the upgrade yet. 18K BTU though which I'm looking forward to.

My only advice is to get a vent hood where the actual vent is the full width of the range. My vent is only over the middle/back portion of the range with a glass piece extending beyond the vent to each side of the range, and it sucks (or maybe doesn't suck well enough?).

Our kitchen remodel is in the design stage, so it's fairly early, but I'm already thinking about appliance.

Z-Line keeps popping up in my searches - anyone have any opinion on this brand?

We're in the same stage but our designer has said that lead times on appliances can be super long so wanted us to get to deciding very soon.

I will be in the market soon and was looking at 60" ranges and was surprised to see that the Wolf was cheaper than Thermador. Thought Wolf was a step up from Thermador?

By the way, only reason why we are looking at the 60 instead of 48 was to eliminate the wall mounted oven as the 60 gives you two full size ovens. About same price as a 48 and wall mount oven combined.

The 60 also gives you 6 burners with an option for a massive flat top grill built in

1) All the BTUs you'll give me. I have a Blue Star with Primanova @ 25K BTUs on burner and a 22K Ultranova Burner on another burner. Commercial range tops run about 30K for comparison. My previous house had a Viking that put out 18K and I always wanted more. Who TF wants to "get by" on something you'll use for 20+ years?

Wok cooking is the best thing about the Blue Star. I use the hell out of it, so this may not be important, but, you may end up enjoying it more when you can do it properly.

2) I want less crap to go wrong with my oven and have never had an issue baking with all gas. The convection fan works fine in mine. Unless you're wife has a baking business out of the house you'll never know the difference

3) You'll want a vent that will suck shut an open front door. We got the max residential Vent-a-hood. If you utilize a high btu range to it's full potential, you'll be making some smoke. I made some steaks last night for my son's birthday and you just can't sear steak indoors without making some smoke.

Also, not asked, but, get the double wide griddle. I'm never using all 6 burners, but, have to go outside to my Blackstone when I can't fit what I'm cooking on the single wide griddle. Only regret with this purchase

We get more compliments on our range than anything else in the house. I love the color options on the Blue Star

Monogram is way better than the 20yr. old piece of trash Viking that we gave away. Wife got to choose this one all the way. Lots of drawbacks that I see- all the burners are the same size (someway to play with the knobs to get a good simmer... I'm just not patient enough,) extra 'features' only include a timer, and oven door doesn't seem to shut all the way- not sure if that'll become an issue.

Pluses
- all burners can flip to wok mode. We could run a Vietnamese catering business.
- easy to dial in oven temperature and convection.
- goes with all the other Monogram stuff that was here.

If it was up to me, we'd have a Thermador or Blue Star.

(excuse the cluttered countertop please)

Hope you get the awesome kitchen you want for under $15k.

Wow...guess this isn't the forum to ***** about having to spend $11K on an oven, microwave and range. You all are making me feel better about my purchases.

Agree with the comments on the hood. We have a thermador professional range and hood and it's been great for 20(?) years. Make sure you think about where the exterior venting will lead. We're lucky that there is a large exterior brick wall directly behind the hood and it was designed as we built the house.
