Smoking in Cold Weather

Anybody have experience using their smoker in cold weather? I'm really wanting to do a brisket on my Weber Smokey mountain but with temps around freezing I'm not sure I should attempt it. My best guess would be that I need to cook it on the hotter end (275) if I do.

I smoke around that temperature pretty frequently in a WSM. I've noticed it takes a little longer to get to temp and some more fuel but no major issues.

Cold is fine. Cold and windy means you'll burn through more fuel.

I've cooked in sub-zero temps on my WSM. No need to cook any hotter, you'll just need to burn a little more wood and charcoal to keep it at the temp you want.

Also, wind is much harder to cook in than cold.

I smoked a ham on my WSM yesterday. It was 16 degrees with a windchill around 0 up here in OKC. Smoked with an empty water pan and it stayed at around 300 degrees the whole time.

If where you're at is hovering around freezing temps, you'll be totally fine no problems at all.

I have an offset pit that is made from 3/8" casing pipe. Once it gets to temperature, it is generally easy to keep it there. On a cold day, you will burn more wood. Cold and windy... not worth it.

Brisket, I use post oak. Chicken/Ribs, I use cherry. Just don't want to burn through my wood on a cold day.
