Steep the milk/cream with rosemary for 10-15 minutes.

Horseradish mashed potatoes.

"Sour cream and onion" is also good. Just add sour cream and chives.

Make loaded mashed potatoes. Butter, sour cream, chives, cheese, bacon, perhaps some roasted garlic.

Or you could always try to make them the Joel Robuchon way which are supposedly some of the finest mashed potatoes on the planet.

What does that mean "fold it in"? I can't fold a mashed potato (from *****t's Creek).

Cook yukon gold potatoes and rough mash. Add in garlic, rosemary, & thyme that's been simmered in a stick of butter (on low). Fold in heavy cream and sour cream until it's your desired consistency. Finish with s&p to taste.

Mash them super fine by thick, and fridge them. Once cool, roll them around a big cube of swiss or provolone, roll into a ball, cover in breadcrumbs, and deep fry.

For most people, they don't get enough of the water out of the potatoes after cooking them. The more water you take out, the more butter and cream they will hold, and the richer they'll be. That's why instant potatoes can hold so much cream.

That's all Joel Robuchon is doing. That's also why he cooks them whole instead of cutting before boiling. His method piped on a Parmesan crisp, then sprinkled with chives, and dusted with some powdered bacon (put very cooked (almost burnt) bacon in a food processor and pass through a sieve) is the best "elevated" loaded potatoes I've ever had.

I've also enjoyed adding cheese, chives, and bacon, chilling, then deep frying. Any of the horseradish potatoes would be fantastic as well.

Add garlic salt, black pepper, butter, half and half and fresh chopped cilantro ....mix and mash to a consistency you like....you can thank me later.

something really simple is to use 1/2 russet potatoes and 1/2 yukon gold potatoes. The yukons are more waxy and give a different texture. Don't whip them, leave them a little chunky and also don't peel them completely of their skins. You'll have potato bits retaining a little of each texture, plus little bits of skin - just makes things more interesting.

I simmer garlic in half and half and then mash with shredded Parmesan. It's a variation on an Alton Brown recipe and is always a hit.

If you have eggs and flour, you can make potato gnocchi. I like them better than pate a choux gnocchi. If you added a bunch of fat to the potatoes, cut back on the egg yolk.

Boil your potato in a 1:1 heavy whipping cream:half and half with crushed garlic and maybe some herds (thyme??). Drain the dairy into a bowl. Mash your spuds then add back the dairy into your mash as needed. Amazing. Can be spruced up as you see fit, but at that point, a bit of s&p do the trick.

Totally off topic, we pure the hell out of cauliflower and have a chimchurri (sp?) sauce we put on top. Everyone loves them and can't tell they're not potatoes. Our vegetarian friends of course love them.
