Asking the experts if I can cut this in half before cooking and freeze half. I'm roasting this in the oven and I don't have a pan that will fit the whole brisket. Plus we'll never eat all of this now.

You can for sure separate the point and the flat, and freeze the one you don't cook. Not sure how i would do it other than this, but I'm certain someone will chime in shortly. As for the roasting a brisket part, well...
