- Humboldt Fog: a great starter blue that isn't very powerful. Creamy and earthy flavor. I love it and I hate blue cheese.
- D'affinois: this is a uber creamy cheese that's great with meats. Very buttery and rich tasting.
- Goat Beemster: smooth and has little sea salt bits that give it a little extra. A harder cheese but not rock hard. Will hold up well on a board.
- cacio di boscotartufo: can't go wrong with a white and black truffle cheese
- Monte Enebro: this one will set you apart from any other dinner party your guests have ever been to. It's a wonderful Spanish cheese and very memorable.
