Cheese for Wine/Cheese Event w/Shipping

How long do you want to ignore this user?
I've got a virtual wine and cheese party I'm hosting for about 20 people. I've got the wine covered, but wondering if anyone has a good option on cheeses. My preference would be 3-4 cheeses about 4 oz each, crackers and maybe 1-2 other options w/o $50/person shipping. I've got some emails into a few places, but just checking if anyone has a rec.

They will deliver with Postmates or Door Dash, if you're close enough.

Check out PennMac in Pittsburgh. They ship globally and have a wonderful selection. Www.pennmac.com

I'd go with the following meats and cheeses:

- Humboldt Fog: a great starter blue that isn't very powerful. Creamy and earthy flavor. I love it and I hate blue cheese.

- D'affinois: this is a uber creamy cheese that's great with meats. Very buttery and rich tasting.

- Goat Beemster: smooth and has little sea salt bits that give it a little extra. A harder cheese but not rock hard. Will hold up well on a board.

- cacio di boscotartufo: can't go wrong with a white and black truffle cheese

- Monte Enebro: this one will set you apart from any other dinner party your guests have ever been to. It's a wonderful Spanish cheese and very memorable.

For the meats:

Spanish Iberico ham
Braseola
Rosemarie
Pancetta
Speck
Sopressata

Also consider:

Gerkin pickles
Fig jam
Green olives with the pit
Red sweet peppers like peppadoo
Octopus salad

They have a Heady Topper based cheddar and a Lawson's version. Both are solid.

My absolute favorite cheese is called Red Witch. Sadly, I can't find anyone in Texas that carries it.

My go to is manchego on a flatbread cracker with a serrano slice. Used to add some prosciutto.

Is just sending out a list of what cheeses to get not an option? Even if just a back up option. I've done virtual wine and cheese pairings and it's always just listed them out: aged Gouda, manchego, Brie, blue cheese, etc.

They're great about choosing for you. I often go in and tell them what I'm hosting and have them pick the cheese and meat for me. Pre-covid, you could sample as much as you needed to. Learned a ton about cheese that way
