I have an cook-off in a few weeks and thought i had seen a decent bean recipe on her in the past. Pretty sure i used it once, but can't locate it now. Anyone have a good bean recipe(dry pinto) i can use and hopefully win with! TIA

Keep in mind that some places have rules that there can't be anything in the pot bigger than the bean. You may want to sub out the Clamato for V8 Bloody Mary so you don't have to worry about someone having an allergic reaction to the shellfish.

Clams aren't a shellfish (crustacean), they are a mollusk and it's rare for those with to shellfish allergies to be allergic to mollusks.

I used the Texags recipe (except I used real soaked beans) and never did well. After doing about 5 comps and never doing well with really good beans I found one of the winners and tried theirs and they were incredibly salty and definitely not something you would have a bowl of. Comps are weird because they're only taking one bite so you have to over season it seems.

I had heard some feedback that they don't like the green from the fresh cut cilantro or red from the tomato either. The beans that I've seen do very well just look like regular boring beans with miniscule pieces of ham/bacon.

In that case, I would just use Clamato and maybe some tomato sauce, and for the cilantro bundle it up with some cheesecloth so you can remove it later. And season the hell out of them.

I recommend bacon. LOTS of bacon! And the Clamato is loaded with msg which is what makes it so good!

I have had some luck cooking mine in the smoker in a Dutch oven with the lid off. Just for a bit in the smoker, the smoke flaver will overperwer quickly. You want just a hint of smoke. Definitely something to try at home first.

Another thing to expiriment with is very dark roast espresso.
It takes a special kind of brainwashed useful idiot to politically defend government fraud, waste, and abuse.
