Good recipe for anemic patient

I have a friend who I'm making a meal for and looking for a good recipe. Both he and his wife are anemic so need something high in iron. He also has a colon infection so nothing spicy. Also, would prefer it easy for them to heat up like a soup or stew. I've wanted an excuse to cook Milk Street's No-sear Lamb or Beef and Chickpea Stew, but think it may have too much spice in it.

Sprouted Lentil Pilaf

-Cook 1 package Tru Roots lentil blend.
-Once finished drain and set aside.
-cook 1 red bell. 1 onion and 2 to 4 cloves of minced garlic until beginning to brown. Toss 2 large hand fills of spinach on top and wilt.
-throw lentils in pan with veggie mix and cook until liquid is gone and beginning to brown lentils lightly.
-season with your preference just before finished. I like to do a more southwest seasoning blend here, but Italian or others will work.

Serve as a side with strip steak.

I make something similar, but top it with a poached egg

Cook it in an iron skillet.

No joke, it does add iron to your diet. So, start with a meal that is high in iron, cook in an iron skillet, and you get even more iron. (google it if you don't believe me).

I like wilted spinach salad for a side.

cut up some bacon, get it cooking in an iron skillet until it renders some fat, add some onions, and cook until done, put quite a bit of spinach, and cook it just until the spinach is wilted, but not before it turns stringy. Remove from pan, season with balsamic, and maybe a little pepper. Croutons optional.

Easy to make, portion and freeze. Had a buddy with the same issue and I loaded his freezer up.
