Garganelli made from scratch

Friend wanted me to teach her how to make pasta, I gave her several options to choose from, she chose garganelli. 50/50 mix of semolina/type 00 and 5 eggs in this dough, it came out very well.

I use a manual pasta machine to roll out my pasta sheets, it is also great for making cannoli. The pasta attachment on the Kitchenaid is incredibly handy, using a manual pasta machine is just a personal preference.

I use a Kitchenaid mixer to make my dough. Normally when teaching someone to make pasta, I believe in doing it the 'traditional' way by hand the first time so they know the work involved, but my friend has some dexterity issues due to a surgically-repaired wrist she is still rehabbing, so I wasn't going to put her through that.

I have the KA pasta press attachment for making bucatini/fusili/rigatoni, I just don't use it much. I'm not happy with the pasta cutter on it.
