Spill those secrets and tips. I'm not just talking about butter, white bread and cheese. What type of bread? Types of cheese? Mayo or butter? Some places add meat. Turkey, ham, etc I've even seen sloppy Joe's on a grilled cheese. Do you add tomatoes? Onions? Etc..

A firm white bread is key, and it doesn't need to be thicker than your standard sandwich slice bread. Mayo is easier to use, but I prefer the flavor of butter. Melting the butter in the pan beforehand will allow you to drive off the water in the butter and give you better browning. For cheese, I prefer a sharp cheddar, but use what you like. The only thing to add is that the cheese should be grated. It will melt faster, and those bits that melt and hit the pan get crunchy, which is nice. I generally don't add anything else, because I just want bread and cheese and a fat to toast it in.

We just had this for lunch. We bought a great homemade loaf of crusty jalapeno cheddar bread at the farmers market yesterday. Used ghee instead of butter, sharp cheddar & added a nice slice of lightly grilled, fresh tomato because we have a million to use up. Got a great toasty crunch on the bread & a good hit of spice from the jalapenos. The tomato was a nice, juicy add. Plan to do again tomorrow.

I did the grilled cheese from Chef and then done in more detail on the Chef Show. ****ing amazing. White and yellow cheddar, gruyere and parm in sourdough. The key is to mess with the Heat a lot so you don't burn the bread while keeping it on the heat long enough to thoroughly melt all the cheese.

Oh, and lots and lots of butter. Butter in the pan as well as on the bread with the occasional reapplication

Not gourmet but Panera sells bread by the loaf and the tomato basil bread is pretty good for grilled cheese

White bread, slice of cheddar, slice of havarti, slice of American. I get all the cheeses at the deli counter and sliced on 1. Grill in plenty of butter.

Once you add meat, you have a grilled sandwich, not a grilled cheese.

I'm a fan of using sourdough. Heat the butter in a cast iron pan until it's bubbly so the bread basically fries and gets delicious and crunchy. Cheese of your choice, add another tablespoon of butter when you flip. I might add some garlic powder, black pepper, Italian seasoning, etc depending on what I'm making.

Pepperidge Farm Farmhouse Sourdough bread
Aged NY white cheddar with provolone cheese and grated swiss
A couple slices of fresh garden 'maters with S&P
A liberal amount of butter for the bread and a light grating of parmesan over the butter to create a cheesy crust on the outside.

Honestly this. I hate to lend Fido credit since he irritates me but he's right.

White bread, deli sliced cheese. It's a grilled cheese folks. Keep expectations low and it will just about always please.

We use the HEB Hill Country Fair White American for a lot of our "melty cheese" tidbits in our kitchen and that includes our grilled cheese. Nothing melts like American. Supplement with other cheeses for flavor but it's got to have a little American for the texture.

There's a time and a place. On a cold rainy winter evening when a soup and sandwich is all that sounds good, we go all in on the gourmet grilled cheese.
But there's always a special place for a couple slices of white bread, a slice of American and one of cheddar - just the way my mom used to make it.

I've tried many fancy grilled cheeses, both from myself and from restaurants. Cheap sandwich bread and American cheese is still the best.

one step that i think adds something extra is to griddle both sides of the bread. meaning, the side facing the cheese, as well as the outside.

also, cook it on med-low or low to ensure the inside is fully melted by the time the outside is nice and golden.

Not a fancy version. White bread, kerrigold butter 1 side of each slice. American, a little shredded mozzarella, another slice of American. Cook very slowly on griddle/skillet to slowly melt the cheese and get a golden brown crust on the bread.

Like mom made but the mozzarella makes it gooier.

Butter or olive oil on the outside, mayo on the inside. Sourdough, white, a good multi-grain wheat or a rye bread are all awesome. Dark rye is surprisingly good, especially with smoked cheddar.

Smoked sharp cheddar, with either harvarti, motz or monterrey jack.

I don't get all bent out of shape when adding other things, so a good fresh tomato, some bacon or some honey ham is a welcome addition as well.

One thing I've changed is melting the butter and brushing it on the bread instead of just using it from the fridge or even room temp.

Light garlic salt on the outside.

You people make me sick. A grilled cheese consists of only these following items. Cheese. Bread with spread (usually butter). This entire forum consist of "melts". Almost every "grilled cheese" sandwich i see on here has other items added to it. The fact that this forum is called "grilledcheese" is nothing short of utter blasphemy. Let me start out by saying I have nothing against melts, I just hate their association with sandwiches that are not grilled cheeses. Adding cheese to your tuna sandwich? It's called a Tuna melt. Totally different. Want to add bacon and some pretentious bread crumbs with spinach? I don't know what the hell you'd call that but it's not a grilled cheese. I would be more than willing to wager I've eaten more grilled cheeses in my 21 years than any of you had in your entire lives. I have one almost everyday and sometimes more than just one sandwich. Want to personalize your grilled cheese? Use a mix of different cheeses or use sourdough or french bread. But if you want to add some pulled pork and take a picture of it, make your own forum entitled "melts" because that is not a ****ing grilled cheese. I'm not a religious man nor am I anything close to a culinary expert. But as a bland white mid-western male I am honestly the most passionate person when it comes to grilled cheese and mac & cheese. All of you foodies stay the hell away from our grilled cheeses and stop associating your sandwich melts with them. Yet again, it is utter blasphemy and it rocks me to the core of my pale being. ****, I stopped lurking after 3 years and made this account for the sole purpose of posting this. I've seen post after post of peoples "grilled cheeses" all over reddit and it's been driving me insane. The moment i saw this subreddit this morning I finally snapped. Hell, I may even start my own forum just because I know this one exists now.

If you aren't crusting the outside with garlic salt and Parmesan cheese on the outside and grating your cheese on the inside and buttering and lightly toasting the bread both on the inside and outside of your sandwich, then it is amateur hour in my opinion.

Haby's Bakery from the Little Alsace town of Castroville, Texas makes a sandwich bread that is PERFECT for grilled cheese sandwiches (or melts). The bread crisps up so great.

I like to melt the butter in the skillet like my Momma did. My wife butters the bread first.

Gruyere cheese is nice when you don't want to go with the traditional cheddar/american. That said, Gruyere is a distant third. Wonderbread, butter, and a nice cheddar with a solid dash of salt on the outside is hard to beat.
