al pastor tacos in the smoker

(Obligatory I tried to search this and didn't come up with anything so apologies if there's already a thread on this)

Anyone made al pastor tacos in the smoker?
Were you able to source sliced pork shoulder or did you slice it yourself?
Tips? Recipes? Other?

I'm thinking of basically doing this, but I use a barrel smoker.

Don't see why a butcher wouldn't slice a shoulder for you. Looks like a great idea.

I've done it. Pain in the ass but very good. Put the pork in the freezer for 30 minutes before slicing.

I've used Rick Bayless' recipe in the past with good results. I don't bother with a rotisserie; I just slice the meat thin, marinade, and grill it hot and fast. Then grill the onions and pineapple, and chop everything up and mix it together.

If anyone is considering trying this, I recommend it. These turned out great this weekend despite some rookie missteps.

Probably should have used smaller pieces and made two towers instead of one.

you can see some pickled onions in the jar behind there on the video. That's one thing I've found really sets off a pulled pork or al pastor taco is some pickled onions.
