Food safety - smoked pork butt

I smoked a port butt a week ago tomorrow. While I've been eating it for most of the past week, there is still a lot in a sealed container in the fridge.

Is it too late to transfer to smaller containers (freezer ziplock bags or food saver bags) and freeze? Or am I rolling the dice at 6 days out post-cook?

Back in January I roasted a pork butt in the oven and ate on it for 7 days before I froze the rest of it with no problem.

Just reheat it well when you thaw it. Maybe mix it into something and cook to be on the safe side.

Thank you both. I figured it was probably still safe but want to be sure. Reheating will be the lynch pan - doing it adding enough liquid so it doesn't dry out and taste funky.

It will be fine. The meat will taste different, but that's from oxidation, not bacterial issues.

If you are super worried over reheat it, slather in your favorite sauce since it will be dry. And eat.

To keep from drying out might try reheating in a steamer basket with a little BBQ sauce added to the steaming liquid.

It will be fine, smoking is a preservative.

When you reheat, vacuum seal and sous vide - keeps the moisture in the meat and does a great job. Can even toss a little bacon grease or butter in the bag when you vacuum seal for additional moisture and flavor.
