We cut it up into small strips and fried ours and it was some of the best fried fish I've eaten.

Soak overnight in buttermilk, cook up like any meaty fish steak such as swordfish - s&p, quick sear the outside, cut the heat and let ride until internal temp reaches comfort level; rest, garnish, serve.
